What's for Brunch? Here's a Healthy, Tasty Sunday Concoction

It's Sunday morning and the birds are chirping. The sun is peeking through the blinds, glancing off your crisp sheets and reflecting onto your walls. What once were bland are now dancing with color. You roll over, check the clock and realize it's still early.

You stretch, shuffle the covers off your well rested body and take your first step into the new day. It's only then do you realize you're still slightly drunk and craving something thick to soak up Saturday night's mistakes.

Here's a healthy, incredibly delicious recipe for your Sunday brunch. Trust me, this is going to be delicious.


2 eggs
1 cup ground pork
1 biscuit

How to:

Heat a pan to medium-high and cook the ground pork. Season lightly with pepper and salt, maybe some garlic pepper if you're feeling crazy. Once cooked, remove from pan. Now spray the pan with non-stick and crack two eggs. Do not scramble them. Instead, place a pan lid and let them sit for roughly one minute. Remove lid, pour half an ounce of water into pan, place lid back on. Wait another minute, remove the lid, and you should have two perfectly cooked over easy eggs.

Place your biscuit on the bottom of a bowl, then cover with your cooked ground pork. Place both over easy eggs on top of it all, sink your fork into the deliciousness in front of you, and realize life is good.
